ABSTRACT
During anesthetic procedures, especially during general anesthesia, the protective reflexes of the airway are lost and the risk of aspiration increases. The preoperative fasting state up to eight hours, previous to the general anesthesia is a common practice. However, scientific evidence has shown that perioperative fasting should be adjusted according to the characteristics of the patients and the surgical procedure. Risk factors favoring perioperative pulmonary aspiration in general anesthesia are; pregnancy, age, obesity and digestive disorders, especially gastroesophageal reflux. The aim of this paper is to review current concepts related to perioperative fasting, emphasizing in clinical practice guidelines.
