ABSTRACT
Background: Non-caloric sweeteners are of great interest to the food industry, healthcare professionals, and consumers. Objective: To investigate and evaluate the degree of knowledge of health professionals about the biological and physicochemical characteristics of non-caloric sweeteners.
Material and Method: A survey study applied to those attending the sessions of the XXXIX National Congress of Internal Medicine, held in Querétaro, Mexico, from November 16 to 19, 2016. It was a semi-structured printed survey (not validated).
Results: Of the health professionals and medical students surveyed (n = 1259), only 97% (n = 1122) stated their degree of knowledge or ignorance of the properties of non-caloric sweeteners. Only 69% of the respondents knew the definition of noncaloric sweeteners in the currently available bibliography, that is, 31% of the surveyed health professionals did not know exactly the physicochemical characteristics and the elemental metabolic effects of non-caloric sweeteners, despite being these products widely consumed today.
Conclusions: The results obtained in this survey point to the unavoidable need for continuing medical education already stated: only 69% of the participants can cite a correct definition of non-caloric sweeteners and 51% still mistakenly conceive that non-caloric sweeteners could alter the glucose and insulin homeostasis.
