ABSTRACT
Fruits and vegetables are an important component of a healthy diet. Some fruits as bananas offer great medical benefits because they help to the calcium, nitrogen, phosphorous detaining in human body, can be eaten by diabetic people, possess astringent, antifungal and antibiotic properties. Banana itself is an excellent source of potassium, vitamins and starch, it is one of the most common harvests in all tropical weather countries; from whole banana tree the banana fruit is the only part consumed by human being specifically the pulp and because of
this, big quantities of waste are made from not utilized banana tree parts, which contributes to the rising of microbiological and environmental problems due to the amount of moisture and nutrients within it, being the case of banana peel which has important components used in the enrichment of other food products. Recent studies have found that banana peel has antioxidant compounds that act against heart disease and some cancers. The aim of this review is to provide information about the chemical and nutritional composition of this fruit, as well as his uses and functional properties.
