ABSTRACT
Food label has played an important role in the security and protection that can represents for those people who eat the food that contains the label. Nowadays, food labels have had modifications and regulations in order to give credibility to the information it can provide, important changes are those related to the nutritional information since label can be a reliable source of nutritional education and protection for consumer from the point of view of health. For that, it is indispensable to have the existent regulations based on scientific knowledge of nutrition. The objective for this project was to review updated bibliography and recent regulations based on the food labels in order to have the necessary information about the main nuritional aspects that the food label may have. This information should be useful and used by food producers, researchers ans specialists in the efficient valuation of food labels and guarantee that it can achieve its social function. The main aspects that should have most of the labels on the food containers are: nutritional information of the food about the serving size and the relations to health, panel task of nutrition and the establishment of daily value percentages as measure of how a food can be adapted to a determined diet, alternatives for the containers with certain restrictions for nutritional information, the most common description and their meaning for the content of nutrients and the main aspects related to food labels directed to babies and food labels that show alimentary additives.
