ABSTRACT
Struggle against food-borne pathogenic microorganisms is based on plausible policies for sanitary inspection, thus leading to the development of faster and more effective methods for detecting and identifying hazardous bacteria in those areas where biological hazard pose a security problem. Identification techniques based on culture methods and phenotypic characteristics of bacteria are tedious and can overtake weeks, making them unpractical for analyzing perishable foodstuff such as dairy, meat, poultry and fish. The application of culture-independent methods such as the polymerase chain reaction (PCR) can help to solve this problem. Current efforts are aimed to the establishment of international standards for the application of PCR-based methods for the detection of pathogenic bacteria in foods. In this paper, the usefulness and advantages/disadvantages of PCR as a tool for the identification of pathogenic bacteria in foodstuff, as well as the new trends of its application and current efforts toward international standardization of protocols are reviewed.
