Healthy food acceptance in children

ABSTRACT
Diet during childhood will determine future health. A poor
diet is related to overweight, obesity and even malnutrition.
Encouraging healthy food consumption is important. Therefore,
the aim of this study was to describe the factors that
influence the acceptance of healthy foods in children. The
study is qualitative, ethnographic, the research techniques
are participant observation and semi-structured interviews
in a sample of 101 children between 4 and 14 years who
participated in the University Center for Health Sciences in
Summer Course in July 2010. The results showed that image,
smell, flavor, texture and temperature of food, plus personal
factors such as food preferences, the consumption capacity
and knowledge about healthy food and the influence of
other children persuade child to accept food.
