Estado de la prescripción dietética en un hospital clínico quirúrgico terciario

ABSTRACT
It is intended to assess if the act of the hospital dietetic prescription is conducted following any scientific guideline at all. For that purpose, clinical charts of 460 patients
randomly selected from those admitted to the Clinical Surgical “Hermanos Ameijeiras” Hospital (Havana City, Cuba) between August and December of 2009 were audited in order
to retrieve the currently prescribed dietetic figure. Four-hundred forty-five (96.7%) of the expected dietetic figures were recovered. Retrieved dietetic figure was examined in
order to see if it provided information about the nutrient composition (energy included) of the dietetic prescription, and the texture/consistency of foods to be served. The
dietetic figure was also analyzed within the context of the patient’s primary disease in order to know if intake of a particular nutrient was restricted for palliating the disease’s symptoms and progression. “Free diet”, “Hyposodic diet”, “Diabetic diet”, “Soft diet”, and “Hypoalergenic diet” were the most prescribed dietetic figures, and explained 52.3% of the retrieved figures. Only 11.9% of
the retrieved figures informed about the energy to provide, whereas 8.3% of them did it regarding the protein content of hospital diet. Sixty.-six point seven percent of the figures
described the texture and consistency of the foods to be served. In 272 instances dietetic figure informed about nutrient restrictions in the hospital diet. It is concluded that hospital dietetic prescription is not conducted
according to any scientific guideline at all.
