ABSTRACT
As part of the search of compounds with possible therapeutic potential and commercial use, stand out those that are produced by microorganisms. Enzymes are macromolecules with specific biochemical activities, both prokaryotes and unicellular eukaryotes possess specialized enzymes which can degrade complex substrates such as of vegetable origin to obtain molecules that can integrate their metabolism. Xylitol is a current example of a multipurpose therapeutic substance that can improve the quality of life for many people. This alcohol has been obtained by microbial metabolism under controlled conditions, but the maximization of its collection and production remains as a source of hard scientific work.
