ABSTRACT
INTRODUCTION. Low stature in children is indicating of highpriority nutricional atiention in the municipality Benito Juárez, Tlaxcala. Diverse programs of direct nourishing support integrate aspects like: nutricia quality-amount and sensorial evaluation, ignoring the nourishing culture in objective population, which can represent a waste of resources and dilution of the eff ect in the infantile undernourishment. OBJECTIVES. To describe cultural acceptance of nourishing preparations against infantile undernourishment in the municipality of Benito Juárez, Tlaxcala. MATERIAL AND METHODS. Descriptive cross-sectional study. There were tasting tables supplying preparations for consumption, mothers interviews structured to and nursemaid of minors were applied to 59, on foods bases: sesame, frijol, Himmaíz and nugget of pumpkin, the answers were registered by means of notes to be classifi ed by matrix of data, establishing an ordering of information by category and codifi cation in numerical values. The cultural acceptance was ordered by frequency allocation. RESULTS. The preparation of greater cultural acceptance was the one of frijol (34,5 points), although the utility ignores, stood out daily consumption, good tolerance, pleasant fl avor and that is harvested in house. The rest of preparations (puntajes from 33 to 26) registered knowledge of utility of the food, little infantile consumption, moderate tolerance, good fl avor but low availability, having a smaller cultural acceptance. CONCLUSIONS. To know the cultural context and social representations in relation to the local infantile feeding previous an intervention nourishing support contributes to optimize the resources of programs, which guarantees a greater impact in the feeding and nutricio state.REFERENCES
