Current state of some slaughterhouses for animals, which are processed for meat for human consumption in Mexico

ABSTRACT
In this study the 3 categories of slaughterhouses in Mexico are described. Slaughterhouses include: Federal Inspection Plants (FIP), municipal and private ones. There are unfortunately, also numerous clandestine places where animals are slaughtered. During the period of 1994 and 1995, a total of 49 slaughterhouses were visited. Six of them were FIP, 38 municipal- and five private ones. Conditions of general hygiene, handling of animals and slaughter methods are discussed. It is concluded that FIP plants are the only ones following established rules and regulations; municipal slaughterhouses are unacceptable with a few exceptions in the northern region of the country, and the private ones vary greatly as to standards of hygiene and humane handling of animals. Recommendations are given to improve municipal- and privately owned establishments.REFERENCES
