Consideraciones importantes para la estimación de la composición corporal de becerros de engorda

RESUMEN
La predicción de la composición corporal del ganado, tanto vivo como en canal, es
importante en todos los segmentos de la industria de la carne; ya que tiene utilidad en:
desarrollo de pruebas de progenie, evaluación de la canal, en experimentos de
nutrición, en la estimación de los requerimientos de energía, en la asignación en forma
individualizada de el costo por concepto de alimentación y en la producción de animales
con la composición corporal optima, para obtener una remuneración económica
máxima. La grasa es el componente corporal más variable en cantidad y distribución
durante el crecimiento, por lo tanto, ésta se utiliza para determinar la composición
corporal. El peso corporal de los bovinos, cuando llegan al corral de engorda (peso
inicial), influye sobre el peso y características de la canal utilizadas para la estimación
de la composición corporal. Los animales con peso inicial liviano (becerros) presentan
una mayor cantidad de grasa subcutánea comparados con los (pesados) añeros. Por
esta razón, no se deben utilizar las ecuaciones hechas con añeros para determinar la
composición corporal de becerros para evitar una sobreestimación.
