RESUMEN
Desde finales del siglo XX, la herencia evolutiva del ser humano junto con un ambiente que se ha ido constituyendo como obesogénico, han favorecido el incremento alarmante de la obesidad en el mundo. Independientemente del mecanismo fisiopatológico básico de desequilibrio entre ingesta y gasto energético en el sujeto, este trabajo se centra en los factores alimentarios que intervienen en la ecuación que lleva a la obesidad. Se revisan los cambios ambientales que han determinado las modificaciones en los patrones alimentarios y de estilo de vida acontecidos en los últimos decenios y que han podido contribuir a modificar el equilibrio energético en relación con el aporte de macronutrimentos, y por último, se discute el papel de los mecanismos reguladores del apetito, incluyendo la densidad energética de la dieta, como un elemento para la intervención y prevención de la obesidad en relación con la alimentación.
