Efectos benéficos y deletéreos del consumo de fructosa

RESUMEN
La alimentación es un elemento clave del estilo de vida y medio ambiente que influye en la salud y que puede ser controlada. Hoy en día, la obesidad y la diabetes mellitus se han convertido en un problema de salud pública, con una prevalencia que incrementa de forma alarmante. Varias son las explicaciones que se han dado para entender este fenómeno, una de ellas es la asociación con el consumo de fructosa. Pero si este azúcar ha estado presente como parte de nuestra alimentación desde tiempos inmemorables, cabe entonces reflexionar: ¿Cuáles son los factores que han intervenido para que su consumo sea nocivo? Al revisar la evidencia podemos concluir que las alteraciones metabólicas que produce la fructosa no son exclusivos de este azúcar y los efectos que tiene sobre la salud o enfermedad dependen directamente del uso que el ser humano le pueda dar.
