ABSTRACT
Plants used as food, seasoning or flavoring have been used by man since the beginning of times, many –perhaps all– have different medicinal uses, possibly due to secondary metabolites that they produce, mainly essential oils, among which are the following: anti-asthmatic, anti-inflammatory, antiseptic, useful for blood circulation, muscle, kidney, nerve, disorders of the digestive, respiratory and urinary tracts, or for the skin, and in strictly female ailments, etc. Briefly we describe the taste and smell senses, and 50 species are presented belonging to 23 botanical families. The mostly used organs are fruits, seeds and leaves, but there are other parts, in fresh or dried form. The spices must be employed in small amount because they are capable of irritate the gastric mucose, also they can produce diverse types of allergies.
