ABSTRACT
Background. The sense of taste allows recognize the flavor of the
food through perceptions mediated by chemoreceptors. Currently
there are no reference values for perception (PT) and recognition
(RT) thresholds of basic flavors in healthy Mexican population.
Aim. To determine the normal values of PT and RT of basic flavors
in healthy Mexican population.
Material and methods. In 50
apparently healthy patients grouped according to age (G1: 18-29
years; G2: 30-39 years; G3: 40-49 years; G4: 50-59 years; G5: 60-
69 years) the PT and RT were evaluated by ascending molar concentrations
of basic flavors. Means of molar concentrations and
nutrient intake were determined and compared for each age group.
Results. The mean concentrations of PT and RT were: for salty
6.06 ± 8.6, 18.6 ± 9.1 mM; sweet 3.8 ± 4.03, 6.4 ± 3.8 mM; bitter
90.22 ± 3.1, 92.4 ± 5.7 mM; acid 1.06 ± 1.2, 2.03 ± 1.72 ± 0.66
mM and umami 0.56, 1.26 ± 0.74 mM, respectively. In comparison
by age group, G2 patients had lower RT and higher PT of umami
taste (P ‹ 0.05). The deficiency of micronutrient consumption was
associated with thresholds alterations for sweet and salty flavors (P ‹
0.05).
Conclusions. This study shows the normal values of PT and
RT of basic flavors in healthy Mexican population. In clinical evaluations,
nutrient deficiencies should be considered, the values of
umami taste must be adjusted to the patient age.
