Riesgos higiénico-sanitarios de la elaboración de alimentos en instalaciones hospitalarias

ABSTRACT
Rationale: Occurrence of food-borne diseases is
a health hospital problem. Important volumes of food are prepared and served at the hospitals for potentially vulnerable groups.
Study design: Descriptive, cross-sectional.
Materials and methods: The study comprised the food services of 5 hospitals of different profile located in the capital-city: Pediatrics (n = 3), Mother-andchild
care (n = 1) and Surgical clinical (n = 1). Surveys were administered at each center to assess hygienic sanitary risks present in the preparation and serving of foods, as well as to measure the level of knowledge on Hygiene of
the food manipulator. In addition, pathogenic microbial species deemed of high epidemiological risk present in food, contact surfaces, and the hands of the manipulator, were determined.
Results: Neither quality nor sanitary registry certifications were demanded upon reception of foods. Food conservation was inadequate in 20% of the instances. Washing of manipulator’s hands was deficient in the inspected institutions. Deficient cleaning and disinfection of food contact surfaces and incorrect washing of fruits and vegetables were observed.
Coli forms (totals + faecals) were found in nearly one-third of the samples taken from foods, contact surfaces and manipulator’s hands.
Salmonella ssp, Listeria monocitogena, and
Staphylococcus aureus were the pathogens more frequently found in foods.
Escherichia coli was found in contact surfaces. Knowledge on Hygiene and Food Manipulation Good Practices was deficient in 66.7% of the surveyed personnel.
Conclusions: Preparation and serving of foods in the hospital institutions are subjected to many hygienic sanitary risks that can become cause of food-borne diseases. It is imperative the adoption of the interventional measures required to overcome this situation.
