ABSTRACT
Food security could be analyzed from information generated for other objectives, nevertheless, it better if the information is created based for food security aim of analyze and develop nourishment and nutritional programs and build food policies. The research about nourishment in populations at the state of Nuevo León, México doesn’t directly focuses the aspect of food security, for those reason the food security inference it’s from other research and data bases. The food security it’s a dynamic condition that includes social factors, the absence of food security it’s not a problem of food production, but it due to population doesn’t have the “nourishment right”, this means they not have the enough resources for the food acquisition. There are several information sources about food security, but they must allow to knowledgement of the nourishment situation, among others, the nutritional and nourishment surveillance is more frequently through qualitative and quantitative surveys. In the analysis of the food security in Nuevo Leon the components of food availability were used, food access and other indicators such as birth weight, nutritional status on minors of five years, pattern of food consumption, index of marginalization and interventions in nutritionREFERENCES
