ABSTRACT
Introduction: Plukenetia volubilis L. (sacha inchi) belongs to the Euforbiaceae family and is native to the Peruvian Amazon. At present it is also cultivated in other countries since it is considered a promising and industrializable plant due to its high content of oil rich in omega 3 alpha-linolenic acid and omega 6 linoleic. In 2015, it was introduced in Cuba to take advantage of the potential of its fruits. Objectives: To carry out the physicochemical and compositional characterization of the fatty acids of Cuban sacha inchi oil.
Methods: Ripe fruits of sacha inchi grown in Cuba were collected. The almonds were separated from the fruits, they were ground and the oil was extracted with n-hexane by maceration. The solvent was evaporated at 45 °C under vacuum. To the oils obtained were determined the main physicochemical parameters described in the Peruvian Technical Standard (NTP). The fatty acid composition was determined by gas chromatography.
Results: The relative density was between 0.926 and 0.928 g/mL. The refractive index was between 1.479 and 1.480, the saponification index between 191.10 and 206.35 mg KOH/g, the acidity index between 0.26 and 0.36 mg KOH/g, the iodine index between 157.50 and 169.30, and the peroxide index between 6.55 and 9.74 meq O2/kg. The total content of fatty oils exceeded 94% and linolenic (42.10-45.90%), linoleic (32.63-36.20%) and oleic (8.50-12.03%) predominated. The minorities were palmitic (3.97-4.50%), stearic (2.27-3.07%), eicosaenoic (0.27-0.47%) and arachidic (0.10-0.33%).
Conclusions: The physicochemical and fatty oil characterization of sacha inchi grown in Cuba was carried out for the first time. This oil of Cuban origin generally meets the requirements of the NTP, so it is similar to that of other origins. This validates its use as an edible oil and raw material in the food, pharmaceutical and cosmetic industries.
