Ácidos grasos en el calostro y en la leche madura de mujeres mexicanas

RESUMEN
El objetivo de este estudio fue estimar la concentración de ácidos grasos poliinsaturados n-3 y n-6 en mujeres clínicamente sanas, durante la etapa inicial de la lactancia al quinto día y al día 30; se obtuvieron muestras de calostro y leche materna siguiendo los criterios establecidos en el hospital para las muestras lácteas. Los resultados mostraron una disminución de los ácidos tricosanoico y lignocérico; el ácido linoleico aumentó a los 30 días de lactancia; en cambio, los ácidos araquidónico y dihomo-gama-linolénico disminuyeron. El ácido alfa-linolénico aumentó y el DHA disminuyó. Hubo incremento en la concentración de ácidos grasos trans, particularmente el z ‹. Respecto a las recomendaciones, el aporte diario de n-6 en el calostro fue de sólo 50% y llegó a más de 100% en la leche madura, en cuanto al n-3 fue menor al 5% en el calostro y menor de 50% en leche madura. Así pues, se observó un consumo bajo de los alimentos ricos de ácidos grasos n-3 y un aumento en el consumo de ácidos grasos n-6 y trans durante el primer mes de lactancia.
