RESUMEN
Los requerimientos proteicos son la expresión numérica que un individuo necesita para mantener la salud y un estado nutricional óptimo. Las recomendaciones de proteínas surgen al cubrir las necesidades del 97.5% de una población al adicionar dos desviaciones estándar al promedio de los requerimientos. El balance de nitrógeno es el método que se utiliza de manera más amplia y el que fue utilizado para obtener las recomendaciones de proteínas internacionales vigentes. Para nuestro país las recomendaciones internacionales deben multiplicarse por un factor de corrección de 1.8 debido a que las proteínas que se consumen son de menor valor biológico. Los nuevos métodos sugieren que el balance de nitrógeno subestima los requerimientos de proteínas basándose en el metabolismo de algunos aminoácidos, por lo que en la actualidad se cuestiona la validez de las recomendaciones de 1985.
